Among these, Jeonnam-Gwangju Integrated Special City kimchi carries the richest taste and sentiment, becoming known by the proper nouns "Jeolla-do kimchi" and "Jeonnam-Gwangju Integrated Special City kimchi." Jeonnam-Gwangju Integrated Special City kimchi is characterized by generously adding seasonings such as various vegetables, anchovy fish sauce, glutinous rice porridge, and whole sesame seeds. Selecting fresh ingredients, carefully preparing them, and fermenting them using the most basic method—plus adding the touch of one's hand—this is the special recipe of Jeonnam-Gwangju Integrated Special City kimchi. The Gwangju World Kimchi Festival is a venue for citizen participation where our unique food culture and traditions embodied in kimchi meet, and as Korea's representative kimchi festival, it is a celebration enjoyed by all.
